Mmm Food

The following are some delicious, mouth-watering, Joy of Cooking worthy, out of this world recipes. Well that’s a wee bit exaggerated now isn’t it? I lied, they’re probably not out of this world, or Joy of Cooking worthy. Heck, they’re probably not even mouth-watering delicious, but I love them and they’re some of my favs, so I can only hope that you love them too.

– Cinnamon Applesauce Muffins

1 cup all purpose flour

3 tsp baking powder

1 tsp cinnamon

3/4 cup rolled oats

1/4 cup packed brown sugar

1 egg

1/4 cup extra virgin olive oil

1/3 cup milk

2/3 cup applesauce

Mix dry ingredients together and add to remaining ingredients. Bake at 375* for 15-20min (depending on your oven). Usually makes about 10 muffins.

– Whole Wheat PB Pancakes

1 cup whole wheat flour

1/2 cup oats

1 tbsp baking powder

1 tsp cinnamon

1/2 tsp sea salt (regular salt is ok too)

1 cup milk

2 tbsps vegetable oil (I also use olive oil – doesn’t change the taste)

1 tbsp honey

1 egg

1/2 tsp vanilla

1/2 cup of chopped walnuts (or another nut if you prefer)

If you want a little something sweet in your pancakes you can add 1/2 cup of chocolate chips too

Sprinkle additional cinnamon on the one side of the pancake while it’s cooking (this isn’t necessary, I’m just obsessed with cinnamon). Rather than use syrup, I spread peanut butter on the pancakes. Usually side with fruit and sometimes cottage cheese depending on how hungry I am!

– “Better Than Crack” Brownies (from Leene’s Sweetest Delights)

1 batch brownies (boxed)
1/2 cup chopped Butterfingers (not optional – the first time I made this I didn’t use these)
1 cup chopped Reese’s Peanut Butter Cups
1 cup milk chocolate chips
1/2 cup butterscotch chips
1 cup peanut butter (creamy or smooth, doesn’t matter)
1 1/2 cups Corn Flakes
Make brownies as per box instructions so they are just slightly under-baked (typically about 20min but it’s all dependent on the oven). Remove and top with chopped Butterfingers and Reese’s Peanut Butter Cups, and bake until brownie is completely cooked through.
While they finish baking, melt chocolate chips, butterscotch chips, and peanut butter together until smooth. Stir in cereal. Remove brownies from oven and evenly pour peanut butter mixture over top.
Refrigerate before serving. They taste the best when cold. Enjoy!
– Broccoli and Spinach Quiche
-2 frozen deep dish pie plates
– 5 eggs
– 1 1/4 cup milk
– 2 cups of cheese (I use old cheddar)
– 1 1/2 cups broccoli (pre-cooked and cut up)
– 1 cup chopped spinach
– 1 cup chopped ham
– 1/2 cup red onion
– top with sliced tomato, additional cheese, salt and pepper, and hot sauce
Depending on your oven (mine cooks slow) and how brown you like it set to 375* for 50-55min
